Quarantine, Keto and KJ

Life is wild right now. Well, more like the opposite of wild. It is boring, but full of magic with baby KJ. I am fortunate to have been working from home since mid-March due to the COVID-19 pandemic.

Out of a combination of depression and boredom, my keto journey was seriously derailed and I regained eight to 10 of the pounds that I had lost since my last blog post.

I am happy to report that I have restarted our keto lifestyle since May 1 and I’m down almost seven pounds! This time I have been working out more — jumping rope, using our resistance bands and one 12 pound dumbbell. I feel better. I’m proud of myself. It’s been a long time since I’ve been able to truly say that.

My favorite part of keto is definitely cheese. We have been making crunchy taco shells with cheese and that is my absolute favorite. I am a feign for crunchy tacos and now I can have them in a low carb version! If you haven’t done it, you must try. This is where I got the inspiration to do so.

Crunchy taco shell made of cheese in the making!

I am still nervous about everything reopening but I know that I need to trust the medical professionals that are aiding the officials in making their decisions. I just hope not too many more lives are lost from this awful pandemic.

Be well.
